What is an 18-hour cold brew?

An 18-hour cold brew is coffee steeped in cold water for eighteen hours and never heated. At Brew & Baker's, our coarse-ground B&B Blend, Chikkamagaluru beans aged in ex-whisky oak barrels, goes into cold filtered water in the fridge and stays there overnight. The compounds that make hot coffee taste harsh need heat to dissolve, so without it they stay in the grounds; what comes out is rounder and sweeter, with cocoa and molasses notes, very low acidity and no bitterness, which is why it is served without sugar. It is brewed in small batches, poured over ice, and comes Regular at ₹169 or Large at ₹209. Take it black, add an extra shot of B&B Blend or 100% Arabica, add a flavour syrup, or make it sparkling with tonic water or ginger ale from the mixers.
